SUGAR FREE LEMON PIE
Ingredients
1 small box (0.8 oz.) Jell-O Cook & Serve sugar-free-fat-free Vanilla Pudding
1 small box (0.3 oz.) Jell-O sugar-free Lemon gelatin
1 8 reduced fat graham cracker pie crust
2 1/3 cups cold water
1/3 cup lemon juice
Preparation
Place gelatin and pudding mixes into a small sauce pan. Stir in water and lemon juice.
Bring to boil over medium heat and simmer for two more minutes stirring frequently. Let
cool for 30 minutes, then pour into pie crust. Refrigerate at least three hours for pie to
become firm.
Optional: An extra half pack of unflavored gelatin increases firmness. Chunks of fruit
added to the filling add variety.
