Mayor Flannery's Wellness Campaign Digital Cookbook

 

MARINATED TOMATOES

Ingredients

1 ½ tablespoons red wine vinegar
1 tablespoon balsamic vinegar
¼ teaspoon kosher salt
1/8 teaspoon fresh-ground white pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 ½ tablespoons olive oil
3 vine-ripe tomatoes, each cut into 8 slices
1/3 red onion, thinly sliced
1 stalk celery, thinly sliced

Preparation

Whisk together red wine vinegar, balsamic vinegar, salt, pepper, oregano, basal, and olive oil in a small bowl.

Pour dressing over the tomatoes, onion and celery. Lightly mix, allow to marinate at room temperature for at least 30 minutes or refrigerate over night.

Makes 4 servings
