MANHATTAN TURKEY CHOWDER
Ingredients
2 tablespoons salad oil 1 teaspoon dried thyme leaves
1 cup sliced onions dash sugar
3 cups chicken broth 1 teaspoon salt
2 cups water 1 can (1 lb. 12 oz.) whole tomatoes
˝ garlic clove, crushed undrained
˝ cup coarsely chopped celery 2 cups cut-up pared potatoes
4 parsley sprigs, chopped 2 cups cooked turkey, cut up
in ˝ inch pieces
Preparation
In hot oil in 5-quart Dutch oven, sauté onion, stirring until golden about 5
minutes.
Add: Chicken broth, water, garlic, celery, parsley, thyme, sugar, and salt. Add undrained
tomatoes, breaking up with fork. Add potato.
Over medium heat, cook covered for 35 minutes, or until potato is tender but not mushy.
Add turkey and simmer 5 minutes. Taste for seasoning, add salt if needed.
Makes 6 servings
